ABOUT THIS WINE:
The Ehrharts harvest all of their fruit by hand, sorting through the clusters in the vineyard rather than in the winery. The grapes are pressed gently and undergo long, traditional fermentations with native yeasts. They allow the wines to rest on their lees for 3 years after second fermentation. Given the incredible diversity of terroirs from granite to limestone to sand, and slow vinifications, the finished wines are abundant in opulent aromatics yet are chiseled with a striking minerality and clean acidity. This lovely sparkling wine is a blend of 50% Pinot Auxerrois, 40% Chardonnay, 10% Pinot Noir.

Established in 1725, Domaine Saint Remy is a family business rooted in tradition. Located in Wettolsheim Philippe Erhart has grown wine here in total harmony with nature since 1999. Philippe and Corinne Ehrhart farm their 25 hectares among 11 different villages with a wide variety of soils. All wines have been certified as organic since 2010 and biodynamic since 2012. Their kids Florian and Margot joined the family estate and are now the new generation of winemakers. Winner of the World Gewurztraminer Excellence Award in 2009, Domaine Saint Remy also featured in 2012 among the top 10 of the world's best sparkling wines in Crémant Brut Prestige. All wines have been certified as organic since 2010 and biodynamic since 2012. This is sustainable wine-growing, based on an integrated set of production specifications (Tyflo), infuses life into quality wines produced in a quality enviornment.
