I curated a 6 pack that comprises the full range of "NATURAL" wine. With this in mind I want to expose you to wines that are made, as wine has traditionally being made, without much intervention. This means manual harvest, organic farming, ambient yeast, low/no sulfites, and in some cases unfined and unfiltered. With so much noise around this topic I want to present you wines that are true to their terroir, varietal, and that taste like WINE!

2020 Old Westminster Orange Pét-Nat Piquette
Pinot Gris, Albariño
In our vineyards and cellar, everything is done by hand. From winter pruning, to summer hedging, to harvest, every step of our process is powered primarily by sweat, not oil. This method of farming offers our vines and wines a level of care few others experience. We choose to think of our farm as a living, breathing organism. We implement a pragmatic farming program using environmentally sound materials. We systematically rotate sprays to avoid resistance and reduce the volume of necessary applications. We use diverse cover crops to entice beneficial insects and promote healthier vines with stronger immune systems that demand fewer inputs. We maintain complete cover crops on our vineyard floor year-round rather than cultivate, which releases carbon into the atmosphere and disrupts soil structure, or use herbicides that kill weeds and reduce life in the soil. We incorporate Biodynamic preparations 500, 501 and 508. We consider the consequences of everything we do. Nature’s rhythms are delicate, so we farm with a light hand
Tasting Notes: Piquette, Pet-Nat and Orange, this light fizzy wine has it all! Notes of orange skin, grapefruit and tropical fruit blossoms. It finishes fresh with a hint of savory yeast note. Enjoy for breakfast?...
2018 Folias de Baco "Uivo Branco VV"
15 varietals but mainly Viosinho, Rabigato and Gouveio
White Blend, unfined/unfiltered, hand harvested in early September, undergoes vineyard sorting with no de-stemming, followed by spontaneous fermentation in barrel with ambient yeasts for approximately three weeks under temperature control. The wine spends one year on lees with stirring taking place only in the beginning once every two weeks. Not fined or filtered.
Tasting Notes: Bright and citrus notes on the nose with a hint of fresh herbs, lemon zest fresh green apples, and a touch of mango coat the palate. This wine is light to medium body and it's a perfect example of Portugal's quality and value!
2018 Loxarel "Xarel·lo d'àmfora"
Organic & biodynamic viticulture. Fermentation in clay amphora of 720lts. Subsequently, the wine rests in the same amphora during 5 months. Wild yeasts from the vineyard itself. The amphora is a noble and porous container, it lets the wine breathe and keeps it at a fresh and constant temperature due to the earthenware pitcher effect or the also known as transpiration. The amphora respects the primary aromas and all the work in the vineyards.
Tasting Notes: Bright straw in color with herbaceous aromas and hints of ripe white fruit. The wine is unctuous and fatty with good volume on the palate. Mineral, fresh, elegant and very varietal. Pair with oysters, raw fish, Mediterranean and Eastern cuisine.
2020 Weingut Beurer Trollinger
Jochen farms both organic and biodynamic (he is Demeter certified), yet still he does not speak in easy truths; he seems to be seeking a viticulture that is beyond these simple rules, more integrated, more complete. Vines planted in the mid-seventies and farmed biodynamically, grapes are hand harvested, and the wine ferments in old barrels.
Tasting Notes: Jochen himself always says, “…this isn’t red wine or white wine, it’s Trollinger.” Light and bright with flavors of crunchy red fruits, a myriad of dried spices and a fine, buoyant minerality. A chillable red you want to taste!!
2019 Fond Cyprès "Cyprès de Toi" Rouge
Laetitia Ourliac & Rodolphe Gianesini intend on producing wines that express their sultry slice of the Languedoc — specifically, Escales, in the northernmost part of the Corbières AOC. Their domaine begins at the end of a road lined with Cypress trees and extends in either direction across 15ha of lush vegetation, a secret garden of olives, tomatoes, eggplants, wild herbs, and newly-born kittens.
Tasting Notes: Seriously quaffable, this zero-zero blend is medium-bodied and super clean, light and chewy with gentle tannins. Crunchy black fruit, a sprinkling of peppercorn and a long, fresh finish. Certified Organic, Unfined, Unfiltered, No Added Sulfites.
2018 Domaine François Villard "L' Appel des Sereines" Syrah
Rhone Valley, France
Villard is certified organic; the 2019 vintage will be the first organic vintage. He works his soils and uses organic fertilizers and organic treatments for disease as needed. He’s working with spontaneous fermentations and he’s begun experiments with making wine with very minimal sulfur during vinification and it’s gone well, so he’ll expand on that in the coming years. He has no intention of eliminating sulfur altogether and plans to continue to use a minimum amount of sulfur at bottling. He filters the wines if he needs too, but tries to avoid it.
Tasting Notes: blend of young-vine fruit pulled from four parcels near Condrieu, this Syrah is aromatic with violets and berries and bursting with juicy dark and blue fruit. It's ripe yet balanced, with a savory note and vibrant acidity.
