What is Perrine Loving?

I'm a bit nostalgic not being to go to France and visit my family right now, so while I'm day dreaming about what I will be eating and drinking there at this time of the year why not just replicate it here at HOME in Atlanta...
This cold snow-ish weather calls for richer and heavier whites and the best place for that is JURA (picture above has been taken by my sister few days ago today it's cover by snow). Jura Region is located on the far eastern edge of France, sandwiched between Burgundy and the Swiss Alps.

The Jura vineyards don't cover a large area but they are exceptionally diverse, stretching over 50 miles at the foothills of the Jura mountains, they have thousand stories to tell, from sparkling, white, red, dry , sweet and the famous Vin Jaune.  The region has 7 different AOCs,  ARBOIS was the first received in 1936, historically like many other French regions Jura wasn't making high quality wines before world war II, making wine in Jura is difficult, extreme weather, steep vineyards makes it hard to access. Many wine growers left behind their vineyards to work in the cities where industry were blooming. The bitter 1956 frost discourage even more growers. Thank to Henri Maire, who had the time had an incredible vision for the region and work very hard to elevate the reputation of Jura. Hard work, persistence, unbelievable marketing strategy Maire was able to bring to the region and the wines some attention from Sommelier all over france and Europe. Today the region is full of very talented wine growers, in my opinion Jura is one of the most fascinating region of France. Growers from the region all agree that wine is made in the vineyard and when you harvest healthy, ripe grapes you don't have to do much more in the cellar. 
 In the vineyard from pruning, green harvest to control quantity and increase quality, respecting the environment working organically.

The red wines from Jura are light served slightly chilled, the white are mineral and some are oxidize Sous-Voile and Vin Jaune, they pair wonderfully with Cheeses from the region like Comté, Abondance, Beaufort.


VIN JAUNE:  The wine owes its name to its intense golden yellow color. Vin Jaune, also called ‘gold of the Jura’, is considered one of the world’s greatest dry white wines. It is said that it’s first enjoyed with the eyes, but the rest is just as spectacular. Made exclusively from Savagnin grapes, it must spend at least 6 years 3 months sous-voile (under the veil) reminscent of Sherry.  Chateau -Chalon is the undisputed king of this appellation.

SOUS-VOILE:  Just like Vin Jaune but technically spend less then 6 years sous-voile

OUILLÉ: The opposite of Vin Jaune and Sous Voile, the barrel is being top off to protect from oxidation.
