Think of a delicious cross between Pinot Noir and Syrah, and you have Mencía. Guímaro Tinto is the Domain’s entry-level “joven” (young) wine. It comes from multiple plots of Mencía vines, along with a small amount of other co-planted native varieties, with an average vine age of 40 years old. The grapes are hand-harvested, a portion destemmed, fermented with native yeasts. The farming at Guímaro is organic, noteworthy as Ribeira Sacra in a notoriously damp region where maintaining this standard is quite difficult.
