      Farmed organically and harvested by hand. The fruit is pressed and fermented spontaneously with indigenous yeasts in stainless steel tanks. The wine goes through malo and is aged on its lees without bâtonnage in a combination of steel and old wood.

      Alice and Olivier De Moor operate out of a tiny, cramped cellar in Chitry, but they might as well be on another planet given just how extraordinary their wines are. The De Moors represent the truest essence of the vigneron spirit, a set of artisan values that are all too often missing in Chablis these days. Everything here is elevated to another level. The Aligotés are overachievers, while the village-level wines are frequently the equivalent of most 1er Crus. My only regret is that bottles are so hard to find. These remain among the most compelling wines in Burgundy. Olivier De Moor describes 2012 as a gray vintage with significant mildew pressure, especially from May to mid-July, when excess humidity gave way to dry weather that lasted all they way through to the harvest. Yields came in at around 38 hectoliters per hectare, low by Chablis standards. De Moor adds that the grapes were quite healthy, which is consistent for the year.
