ABOUT THIS WINE
Vinification and aging are done in the most traditional way. The grapes are selected and fermented in open oak vats. Temperature is carefully regulated. When the fermentation is done, the wine is put into small oak barrels for 18 months (longer if necessary)
ABOUT THIS PRODUCER
For salt-of-the-earth, old school Burgundy look no further than Billard-Gonnet. One of Burgundy’s most historical domaines, it was originally created in 1766, which makes it by far one of the region’s most established. Today, it is run by the pensive yet charming Philippe Billard who has been at its helm for multiple decades. Sadly, Philippe will be hanging up his vigneron hat soon to retire so these wines look to be amongst his last.
Now, in addition to the Pommard village appellations, Domaine Billard-Gonnet has eight premier crus. The soil in the vineyard is such that production is under the legal limits imposed by French law.
